With the addition of 3 grams of chitosan, a decrease in cholesterol concentration was recorded at 14.37%; 25.46%; 32.18%; and 37.54%. Furthermore, the addition of 5 grams of chitosan produced a decrease in cholesterol by 32.89%; 36.12%; 42.46%; and 48.57%. Whereas with the addition of 7 grams of chitosan, a decrease in cholesterol concentration obtained was 28.75%; 32.54%; 35.23%; and 37.48%.

Discussion

The results of this study suggest that chitosan from centipede shrimp skin has a potential as an adsorbent to reduce cholesterol levels. The process of chitosan deacetylation is able to change chitosan from the form of chitosan that is bound by acetic acid into a more stable and effective form in absorbing cholesterol. The biocompatible and biodegradable properties of chitosan make it an environmentally friendly choice in medical and industrial applications.

The success of chitosan in reducing cholesterol levels can be associated with its ability to interact with lipids in the body.
