Introduction

Materials and Methods

The study involved the use of yellow passion fruit skin as the primary source of pectin. The skin was soaked in a 0.5 N HCl solution and water with a solid-liquid ratio of 1:15 at pH 2 and a temperature of 60-70 °C for 2 hours. The pectin was then extracted and purified using a series of chemical treatments, including deposition with 96% ethanol, washing with acidized ethanol, and drying in an oven at 40 °C for 24 hours. The modified pectin was then treated with NaOH 3N and HCl 3N, followed by deposition using 96% ethanol and drying in a vacuum oven at 25 °C for 8 hours.
