Introduction

Food safety is a critical issue that affects not only the health of consumers but also the reputation of culinary businesses. In Indonesia, the Food and Drug Supervisory Agency (BPOM) records around 20 million cases of food poisoning every year, highlighting the importance of applying the principle of hygiene and sanitation in food processing. This study aims to describe food processing behavior among culinary traders in the Asia Mega Mas complex, Medan City, with a focus on their knowledge, attitudes, and actions in applying these principles.

Background

Food safety is a complex issue that involves multiple factors, including the behavior of food handlers, the quality of food ingredients, and the implementation of food safety protocols. In Indonesia, the prevalence of foodborne illnesses is a significant public health concern, with many cases attributed to the consumption of contaminated food. The Asia Mega Mas complex, located in Medan City, is a major hub for culinary traders, with over 100 traders operating in the area. However, despite the importance of food safety, there is limited research on the food processing behavior of culinary traders in this region.

Methodology

This study employed a descriptive approach with a latitude cutting study design. The study was conducted in the Asia Mega Mas complex, which has 103 culinary traders. The research sample consisted of 52 traders selected using the Consecutive Sampling method. The data collected was primary through questionnaires that had been previously validated. The questionnaire consisted of three sections: knowledge, attitudes, and actions related to food processing and hygiene.

Results

The results of the study showed that the majority of culinary traders in the Asia Mega Mas complex had sufficient levels of knowledge, with 38 out of 52 respondents (73.1%) meeting this criterion. In addition, the attitude of food processing was also classified as good, with 48 out of 52 respondents (92.3%) showing a positive attitude. However, food processing measures showed adequate numbers, with 28 out of 52 respondents (53.8%) having adequate action.

Discussion

The results of this study indicate that the behavior of food processing among culinary traders in the Asia Mega Mas complex shows varied results. The majority of respondents (51.9%) have good behavior in terms of hygiene and sanitation, supported by sufficient levels of knowledge and positive attitudes. However, there are areas that need to be improved, especially in food processing measures, which still show adequate results.

The conclusion of this study is that the behavior of food processing among culinary traders in the Asia Mega Mas complex shows varied results. The majority of respondents have good behavior in terms of hygiene and sanitation, supported by sufficient levels of knowledge and positive attitudes. However, there are areas that need to be improved, especially in food processing measures, which still show adequate results.

This effort will not only improve food processing standards but also have a positive impact on the health of the surrounding community.

Finally, support from the government and related organizations in overseeing and providing education about hygiene and food sanitation will play a very role in creating a healthier culinary environment. Therefore, the synergy between traders, government, and the community needs to be strengthened to achieve shared goals in increasing food safety in Indonesia.
