Introduction

Sanitation and hygiene play a crucial role in food processing in various institutions, including penitentiary and coaching institutions. The way food is processed can significantly impact the health of residents, including prisoners. In this article, we will discuss the importance of sanitation hygiene in food processing and its relationship with diarrhea events in Class I Penitentiary Institutions Tanjung Gusta Medan for the year 2020.

Background

Penitentiary and coaching institutions face various health problems, including respiratory diseases, skin diseases, and digestive diseases such as diarrhea. One of the contributing factors to these health problems is the way food is processed in these institutions. Food processing that does not meet health standards can cause serious health problems for residents. Therefore, it is essential to apply the principles of sanitation hygiene in every food processing process.

Methodology

This study aims to describe sanitation hygiene in food processing and identify diarrhea events in special coaching institutions for Class I Tanjung Gusta Medan for 2020. The method used is descriptive research. Primary data were obtained through interviews with food processing officers and recording diarrhea events among prisoners. Direct observations were carried out by referring to the six principles of food processing sanitation hygiene regulated in Permenkes No. 1096 of 2011. Secondary data were obtained from the administration and health services at the institution.

Population and Sample

The population included 9 food processing officers and 111 prisoners, with samples taken consisting of 9 officers and 54 inmates. The results showed that of the 9 officers, 5 people (55.6%) did not meet the six principles of sanitation hygiene in the food processing. Meanwhile, in the last two months, 18 out of 54 prisoners (33.3%) had experienced diarrhea.

Results

The findings of this study show a close relationship between sanitation hygiene in food processing with prisoners' health. Unhygienic food processing can cause various health problems, including diarrhea that has an impact on the level of health and welfare of residents of correctional institutions. Therefore, it is very important for special coaching institutions for Class I Tanjung Gusta Medan to increase the equipment and clothing used in food processing. In addition, there is a need for training and supervision of food processing officers in order to meet health requirements in accordance with applicable regulations.

Discussion

The importance of maintaining personal hygiene should not be ignored. The health clinic in this institution should provide counseling about the importance of personal hygiene and provides the need to maintain cleanliness. With this effort, it is expected to reduce the incidence of diarrhea and improve the quality of health in the Class I Penitentiary in Medan Tanjung Gusta Children.

Conclusion

With the right understanding and actions in terms of food processing sanitation hygiene, coaching institutions can create a healthier environment, not only for prisoners but also for officers and all those involved in the food processing process. Through these steps, it is hoped that the health and welfare of the occupants of the institution will be more guaranteed, as well as suppressing the number of diseases that can interfere with their rehabilitation process.
